Beer-Braised Heritage Red Wattle Bratwursts with Mustard and Onions

Ingredients:

  • 1 lb Heritage Red Wattle original bratwursts
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1-2 bottles of your favorite beer (lager or pilsner works well)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp whole-grain mustard (optional)
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste
  • Fresh buns or rolls (optional, for serving)
  • Sauerkraut (optional, for serving)
  • Fresh parsley or chives for garnish

Instructions:

  1. Prepare the Brats:

    • Pierce each bratwurst a few times with a fork to prevent them from bursting while cooking.
    • In a large pot or deep skillet, add the bratwursts, sliced onions, garlic, and beer. The beer should cover the sausages—if not, add more beer or water.
    • Bring the mixture to a simmer over medium heat. Cover the pot and let the bratwursts cook for 15-20 minutes, until they are plump and partially cooked through.
    • Remove the bratwursts from the pot and set them aside. Reserve the beer and onion mixture.
  2. Grill or Sear the Brats:

    • Heat a grill or grill pan to medium-high heat. Alternatively, you can use a skillet on the stove.
    • Brush the bratwursts with a little olive oil and place them on the grill. Cook for 5-7 minutes, turning occasionally, until they are nicely browned and fully cooked through.
    • If using a skillet, sear the bratwursts in a bit of butter or oil, turning until browned on all sides.
  3. Prepare the Onion and Mustard Sauce:

    • While the brats are grilling, return the beer and onion mixture to the stove over medium heat.
    • Add the butter, whole-grain mustard (if using), Dijon mustard, and apple cider vinegar to the pot. Stir to combine.
    • Let the mixture simmer until the liquid has reduced and thickened slightly, about 10-15 minutes. Season with salt and pepper to taste.
  4. Serve:

    • Place the grilled bratwursts on a serving platter and spoon the onion and mustard sauce over the top.
    • Garnish with fresh parsley or chives.

  • Serve the brats in fresh buns or rolls with the onion and mustard sauce, and a side of sauerkraut for a traditional meal.
