Grilled Pasture-Raised Quail with Herbs and Citrus Glaze

Ingredients:

  • 4 pasture-raised quail, cleaned and split
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and black pepper to taste

For the Citrus Glaze:

  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • Zest of 1 lemon
  • Salt and black pepper to taste

Instructions:

  1. Preheat the Grill:

    • Preheat your grill to medium-high heat.
