Spicy Red Wattle Hot Sausage Links with Peppers and Onions in a Sweet and Tangy Sauce
Ingredients:
- 1 lb Heritage Red Wattle hot sausage links
- 2 bell peppers (red and green for color), sliced into strips
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup apple cider vinegar
- 2 tbsp brown sugar
- 1/2 cup tomato sauce or ketchup
- 1 tsp Dijon mustard
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes (optional, for extra heat)
- Salt and pepper to taste
- Fresh parsley for garnish
- Fresh crusty bread or rolls (optional, for serving)
Instructions:

Prepare the Sausages:
- Preheat your grill to medium-high heat. Alternatively, you can use a grill pan or regular skillet on the stove.
- Place the hot sausage links on the grill and cook for 10-12 minutes, turning occasionally until browned and fully cooked. The internal temperature should reach 160°F (71°C).
- If cooking on the stove, use a grill pan or skillet over medium heat, turning occasionally.

Cook the Peppers and Onions:
- While the sausages are cooking, heat the olive oil in a large skillet over medium heat.
- Add the sliced onions and bell peppers to the skillet, cooking for 8-10 minutes until they start to soften and caramelize.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
