Heritage Red Wattle Fat: Crafting Homemade Lard with Tradition

Ingredients:

  • 2 pounds Heritage Red Wattle fat, trimmed and cut into small pieces.
  • Water

Instructions:

  1. Rinse the Heritage Red Wattle fat under cold water to remove any impurities or blood.
  2. Pat the fat dry with paper towels and then cut it into small, uniform pieces.
  3. Place the fat pieces in a large pot and add enough water to cover them.
  4. Bring the water to a gentle simmer over medium heat.
  5. As the fat begins to render, you'll notice it melting into liquid lard. Stir occasionally to prevent sticking.
  6. Continue simmering the fat until all the pieces have rendered completely, and the liquid becomes clear.
  7. Once rendered, carefully strain the liquid lard through a fine mesh sieve or cheesecloth to remove any remaining solids.
  8. Allow the strained lard to cool slightly before transferring it into jars or containers for storage.
  9. Store the homemade lard in the refrigerator for up to several months or freeze for longer-term storage.
