Heritage Red Wattle Pork Stir-Fry with Asian Microgreens

Ingredients:

  • 1 lb Heritage Red Wattle pork loin, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 2 green onions, chopped
  • 1 cup Asian microgreens (e.g., mizuna, tatsoi, shiso)
  • 2 tbsp vegetable oil
  • 1 tbsp sesame seeds (optional)

Instructions:

  1. Marinate the Pork:

    • In a bowl, mix soy sauce, oyster sauce, sesame oil, rice vinegar, honey, garlic, and ginger. Add pork slices and marinate for 15-20 minutes.
  2. Prepare Vegetables:

    • While the pork marinates, prepare bell pepper, snap peas, and green onions.
  3. Stir-Fry:

    • Heat vegetable oil in a wok or large skillet over medium-high heat. Add pork slices and stir-fry until browned and cooked through, about 5-7 minutes. Remove pork and set aside.
    • In the same wok, add bell pepper and snap peas, stir-frying for 3-4 minutes until tender-crisp. Return pork to the wok and mix well.
  4. Add Microgreens:

    • Remove from heat and toss in Asian microgreens and green onions. Mix until just wilted.
  5. Serve:

    • Garnish with sesame seeds if desired. Serve hot over steamed rice or noodles.
