🥘 Chorizo & Potato Hash Bake
Perfect for brunch or an easy weeknight dinner
Ingredients:

1 lb Heritage Red Wattle Ground Chorizo

1½ lbs yellow or red potatoes, diced

1 medium onion, chopped
-
1 cup shredded cheddar cheese
-
1 tbsp olive oil
-
4 eggs (optional, for baking on top)

Salt & pepper to taste

Chopped green onion or parsley for garnish
Instructions:

Preheat oven to 400°F.

In a skillet, cook ground chorizo over medium heat until fully browned. Remove and set aside.

In the same skillet, add olive oil and sauté onions until soft. Add diced potatoes, season with salt and pepper, and cook for 10–12 minutes until golden and fork-tender.

Stir cooked chorizo back in and mix well.

Transfer to a greased baking dish. Sprinkle cheese on top.

(Optional) Crack eggs on top and bake for 12–15 minutes until eggs are set.

Garnish with green onions or parsley and serve warm.
This dish works great as a one-dish meal and also reheats well — ideal for busy families or weekend meal prep.
