Heritage Red Wattle Pork Tenderloin with Rainbow Radish Microgreens
Ingredients:
- 1 Heritage Red Wattle pork tenderloin
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 cup chicken broth
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 lemon, juiced
- 1 cup rainbow radish microgreens
Instructions:

Prepare the Pork:
- Preheat oven to 375°F (190°C).
- Rub pork tenderloin with olive oil, salt, pepper, garlic, and rosemary.

Sear the Pork:
- Heat a skillet over medium-high heat. Sear the pork on all sides until browned, about 4 minutes per side.

Roast:
- Transfer the pork to a baking dish. Add chicken broth, Dijon mustard, honey, and lemon juice. Roast in the oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

Rest and Slice:
- Let the pork rest for 5 minutes before slicing.

- Arrange sliced pork on a platter. Garnish with rainbow radish microgreens for a fresh, peppery crunch.
