Heritage Red Wattle Pork Tenderloin with Rainbow Radish Microgreens

Ingredients:

  • 1 Heritage Red Wattle pork tenderloin
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 lemon, juiced
  • 1 cup rainbow radish microgreens

Instructions:

  1. Prepare the Pork:

    • Preheat oven to 375°F (190°C).
    • Rub pork tenderloin with olive oil, salt, pepper, garlic, and rosemary.
  2. Sear the Pork:

    • Heat a skillet over medium-high heat. Sear the pork on all sides until browned, about 4 minutes per side.
  3. Roast:

    • Transfer the pork to a baking dish. Add chicken broth, Dijon mustard, honey, and lemon juice. Roast in the oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  4. Rest and Slice:

    • Let the pork rest for 5 minutes before slicing.
  5. Serve:

    • Arrange sliced pork on a platter. Garnish with rainbow radish microgreens for a fresh, peppery crunch.
