Ingredients:

4 Red Wattle pork chops
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary leaves, chopped)
Salt and pepper, to taste
Instructions:

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Pork Chops: Pat dry the Red Wattle pork chops with paper towels. Season both sides generously with salt and pepper.

Sear the Pork Chops: Heat olive oil in an oven-safe skillet over medium-high heat. Add the pork chops to the skillet and sear for 3-4 minutes on each side until nicely browned.

Add Herbs and Garlic: Reduce the heat to medium. Add minced garlic, dried thyme, and dried rosemary (or fresh herbs if using). Stir around the pork chops in the skillet for about 1 minute until the garlic and herbs are fragrant.

Transfer to Oven: Transfer the skillet to the preheated oven. Roast the pork chops for 10-15 minutes, or until they reach an internal temperature of 145°F (63°C) for medium rare or 160°F (71°C) for medium, using a meat thermometer to check.

Rest and Serve: Remove the skillet from the oven and let the pork chops rest for 5 minutes before serving. This allows the juices to redistribute and the meat to tenderize.
